Oreo Roll out Cookies


Ok, so this is my first post, so go easy on me! Deb's cookies are amazing. Really, amazing. But what makes them oreo-like is the black cocoa. No question, they would be really, really tasty with regular cocoa. But indulge. It's almost Valentine's day!

Oreo Roll Out Cookies (for the superbowl)
adapted lightly from Smitten Kitchen and Deb's mom

3 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened BLACK cocoa

Preheat oven at 350 degrees. Whisk dry flour, salt and baking powder in bowl and set aside. Mix butter, sugar, eggs, vanilla and cocoa in mixer. Gradually add flour mixture, and mix until smooth. Roll out to desired thickness between two sheets of wax paper (this keep you from having to add flour)- I do a generous 1/4" thick, and refrigerate for one hour.

Cut into desired shapes. Bake on a parchment-lined baking sheet for 10 minutes until the edges are firm and the centers are slightly soft and puffed.

Transfer to a wire rack to cool.

Cut Out Cookie Icing
adapted from I am Baker

1 cup Confectioners Sugar
1 Tablespoon Milk (Add about 1/2 tsp vanilla extract and then fill rest of tbsp with milk)
1 Tablespoon Light Corn Syrup

Combine in a bowl and use quickly before it hardens. Sprinkle iced cookies with disco dust for a little extra pizzazz!
